Dominican nurse gives back; writes West Indian cookbook

Dominican Cathy Winston, a nurse based in the USA, has published a cookbook on Dominican cuisine that is available on Amazon.com.

Cathy Winston is a Registered Nurse with over 30 years of clinical experience who has provided a full range of nursing care to patients and families of all ages. Cathy began her career as nurse and midwife servicing Princess Margaret Hospital and Newtown Clinic.

After immigrating to Anchorage, Alaska with her husband and four daughters, she continued her nursing career at Providence Alaska Medical Center as a staff nurse. She went on to work as charge nurse also and became preceptor (a type of teacher or mentor) in the acute care high risk antenatal unit.  She also worked as a Case Manager in women’s health at Women’s Health South Central in Anchorage. She is now currently retired in Newnan, Georgia USA where she worked for the last 10 years as a registered nurse coordinator community relations case manager.

The cookbook’s genesis can be found in Nurse Winston’s daughter (Tridaugh Winston) urging her mother to record her creative and vibrant recipes. Kathy and Tridaugh also visited Dominica to provide aid and medical services after Hurricane Maria devastated the country. It was during this trip that the initiative to publish the book was given new life. Tridaugh Winston currently resides in New Jersey and is pursuing her goal to become a Trauma Surgeon.

A portion of the proceeds has been dedicated towards Hurricane Maria medical aid and disaster relief.

    So sad that the Doctor in this picture has just passed away. I will support this book and share with others so that more healthcare providers can go back to Dominica as the need is great. Doctors and nurses are probably tired and overworked, very stressful for the body. God Bless you and God bless Dr. St Jean. May he rest in peace.

    Such an inspiration. Truly, reading this has made my day. I admire our persistence, resilience, talents, intelligence, etc.,. We are really an talented people who really have to come together with the gifts that are innate. We need to continue to assist, encourage and thrust each other in order for progress to be made. We must examine our innermost being and bring forth what we have been destined to be. Nurse Winston, I admire you and you are a great example to the rest of us. I remember your contagious laugh and your gorgeous smile. Keep up the good work. We love you.

    I had a similar idea years ago and encouraged others who knew recipes to write books. the key to the recipes is to always list locally produced ingredients. this alone will cause those using the recipes to obtain products produced locally. Thus increasing demand for the local producers of said products. This is how the Italians and Chefs in Spain influence local economy by using recipes that include ingredients their country exports. they in-fact create their own market for their products. If you look at any European recipe book, you will not find one Caribbean or African produced ingredient. Everything is connected… when you include others in your endeavors you must succeed!
