DNO POLL: What is your choice for Dominica’s National Dish?

pollThe National Emblems Committee in collaboration with the Independence Committee and the Statistical Division is currently in the process of trying to determine the official national dish of Dominica.

The criteria are as follows:

•It should be a typical dish of Dominica and should be a popular one among Dominicans
•The ingredients for the national dish should preferably be available locally all year round
•The dish should be fairly easy to prepare and healthy
•It should be part of our cultural heritage

The Dominican population is being encouraged to give as much feedback as possible concerning which dish in Dominica they think should become our official national dish.

In order to survey as many Dominicans as possible a radio programme is being planned to be held simultaneously on four radio stations. A survey of hotels and restaurants is also being carried out and the views of some of the students in all our secondary schools are also being sought.

DNO is seeking readers’ choice for Dominica’s official national dish. The result of this poll will be used by the authorities along with the other surveys, to determine the national dish of Dominica.

There are five choices below and we are asking readers to select one. The poll can also be found on the bottom right hand corner of the homepage.

    At least two of the options you have offered do not fit your own criteria stated. Sanchoche includes saltfish and as far as I am aware this is imported unless the recipe is restricted to fished caught and salted on island. Calaloo involves dumplings in many parts of Dominica. Dumplings, although very popular, are certainly not healthy considering the level of hypertension and diabetes on island; AND flour is imported. Broth which meets all the criteria: health, all year round availability, local and flexible of the ingredients used, is the least popular of the three most popular. In summary the options offered could have been better thought through using your own criteria.

      Did you read DNO’s previous article some few weeks ago that the frog (crapaud) is diseased? Therefore it cannot be used as an edible, healthy national dish? Furthermore, it is caught seasonally.

    I have been reading a number of comments, but one of my problem is that when someone mentions your national dish the people should form a clear picture as to how it will be presented to them on a plate. I had a problem with mountain chicken because I was never able to speak of its preparation nor presentation. Your national dish should be widely eaten. We are so late to the acceptable national dish race that most of the good ones are already gone. How can the committee even suggest some of those I see here? They already belong to other islands. One comment stood out and though I have been to other islands I have never seen them appreciate the ballaw as we do. I know some of us don’t like it, but no country has a dish that everyone will eat, lol. So my vote is fried ballaw and fig in some coconut oil. Lord I wish I had some now

    When we say broth or callaloo I would like to think that the main ingredient the meat is unique to Dominica so specify what kind of meat kind otherwise any broth or callaloo would be the national dish. I would never eat mountain chicken and I am sure many others too but still it was well liked. Why not try Iguana. Many people seem to like it and it all over the west coast. Surely not many East people would not eat it though.

    Callaloo nor both shouldn’t be our national dish because so many different islands make it. The good and bad thing about mountain chicken being our national dish is that it was very unique to Dominica, so unique that now the mountain chicken is an endangered spices. So my vote is for titiwee or sancouche not too many islands make those dishes. I love fig and codfish but it’s so common among West Indians that it’s easy to find even here in the states.

      As much as I would like to side with some of the suggestions, saltfish and fig is already st.lucia’s national dish, I think callalou and something is some other island’s national dish. Now when we say callalou we have to be careful because the way we prepare it is nt how other islands do it and may have the wrong idea so we need to be more specific. Titiwee is not year round. Red beans and pig snout is my choice.

    Hi everybody,
    I am a foreigner who visit Dominica twice a year for many years. And without any hesitation, I would say that the most popular food in Dominica is … fried chicken ! By far.
    Very nice, but not very heathy (especially when it is freezed imported chicken from US, grown in batteries and fed with antibiotics ..)

    Callaloo is not unique to Dominica. It’s all over the Caribbean. Sancouche is not unique to Dominica, salt fish/codfish is unique to Portugal and one of the ways it is prepared. Titiwee Is unique to Dominica, hence the national dish should be Titiwee.

      They did not ask for UNIQUENESS. Not everyone eat Titiwi. Personally, I only eat it in accra. Even if all the Islands cook Callaloo, Broth, Red Beans and Rice, etcetera we cook them differently; nothing beats a CRAB CALLALOO, or callaloo with any type of meat, even saltfish, yes saltfish, and coconut milk. Also a well prepared bowl of BROTH after a hard days work is enticing.

      I think every dish prepared back home is considered a NATIONAL DISH; however, because of visitors from every walks of life, we do need to prepare something that they can enjoy best. My choices are CALLALOO, BROTH, and SANCOCHE.

    In SANCOCHE it’s:
    ● Authentic – using an adjective to describe it’s
    of undisputed origin, genuine and made or done
    in the traditional or original D/can way, and

    ● Original and Unique – again same use of
    description for the reason that it’s one of a
    kind; unlike anything else by D/can.

    cannot believe that Sanchoche and salt/codfish are options. CODFISH IS IMPORTED and these are the main ingredients.

    The main ingredients must be LOCAL. which means Salt fish, bakes and even acras are out because we import codfish and flower. What if the boat don’t come in?
    So CRAYFISH or SMOKED LOCAL FISH or TITIWI cooked in COCONUT MILK, served with local provisions, salad and FARINE and PEAR BALLS on the side.
    For the drink, COCONUT WATER or COCO TEA with COCONUT MILK and TOLOOMA

    It should be a dish as a casserole. If the others aside from titiwi are already national dishes of other countries, what do we have left?
    Try a casserole dish with onion and garlic, however manner it could be prepared to make it delicious.
    When I once visited DA a friend made a white yam baked casserole as potato casseroles or others are made. Prior to baking it or when it is almost baked, I would sprinkle cheddar cheese on it.
    Although it is stated it should not be seasonal, how about breadfruit, tanya, dasheen casserole? Why not such a dish if the others stated are already taken? A little green, red and yellow peppers could be used to make them colorful, be they sliced into small pieces or minced. Having stated that I will try them sometime.
    Why not conduct an experiment? This is what people as Martha Stewart and other chefs do prior to publishing those recipes. They improve on them. Canadian Living states, “Tested ‘Til Perfect.” Therefore they test them for taste. It is worth a try.

    Hy, the best dish I ever taste was the cray fish with coconut milk provision callalou spinach and domplain all I know in fact there many vegetable in that pot , and it was my husband
    That cook that dish . I was so impress I try so many time to cook it myself but it was not same, I love that food I guess he has his little secret any way callalou with is a nice dish so please there have to a national dish callalou with cray fish.

    I did some research and ‘titiwee’ seems to be the only one that we can really call our own. It can be found year round however its peak season is September to November. I say titiri.

      Titiwee is not our own. The name is unique to DA but Titiwee aka Silver Fish can be found in many food markets in North America and elsewhere in the world. I get it year round (frozen) and make accras very often. I also saw it on a Food Network.

      While crayfish may be acceptable, I do not think it would be suitable and qualify for a national dish. I ate crayfish as a child but not as a dish. A few of us young teenagers would go to the river and catch them, then cook them. Hey, my parents were not aware of that. :lol: They were fun times. Those were the days my friend, full of fond memories.

    Cat meat,(Vian Chat), red beans, Bellos Special Pepper Sauce, and little round dombway. When you finish eat that you beat your stomach blaw blaw blaw blaw and you belch block,block, block, block,block,,,,Oh Yeah! Now you are feeling so strong that you can take on Tyson in the boxing ring, and knock him out, with a left “Upper Cut”,because the local dish was so nutritious.     I have many other people on island who will help me to eat my local dish dish. They are not even Dominicans.

    My choice would be Ballao any style and provisions in creole coubouyon sauce. Ever since i was small i know that Ballao and Back n neck were the two cheapest meat and seafood available. These two were consumed daily by mostly poor people. I can remember my mother and almost all the other women in the neighbourhood having their, provisions, rice and pease cooked, their seasoning water prepared and they waiting to hear the conch shell for them to run down by de bay and buy Ballao to come back and finish cooking. Bonned Ballao dipped in a batter and fried could be used as it is more visitor friendly, no bones. What do you think ??…

Now which dish is most exotic and unique to Dominica?

    The Trinidadians and Jamaicans have already claimed callaloo. Lets be practical here folks, a nation dish is something that could be cooked any where, titiwi can’t and besides its seasonal, so does that mean it will only be cooked when in season?? Broth on the other hand can be cooked with anything and any where.

      Really? I must ask my T & T and Jamaican friends about that. However, those who are my close friends are Chinese and Indians. They do not talk about those dishes. I Will ask them anyway. I will also ask a few others when I see them, hopefully soon. I just thought I could telephone a few West Indian restaurants and enquire about the T & T and Jamaican national dishes.

      Callaloo is not as popular in Jamaica as Ackee and saltfish(their national dish) or at least it is not their main talked about dish. I am there now so I would know. I lived in Trinidad for four years and hardly ate callaloo there- it was roti, doubles, channa etc.
      Any choice for our national dish would have something that is available elsewhere or being prepared elsewhere. We just have to find a way to make it unique to us in DA. If we choose Callaloo we just have to give it a Dominican flavor and the same thing goes for if we choose Sancoche(my number one choice).

    The mountain chicken was seasonal so I believe this new dish should not be seasonal. Whenever we have visitors they should not only hear of the national dish but be able to sample it…so I say callaloo

    with all other countries haven their own.we changing mountains,street,etc.where do we stop.if there really is a problem with the frogs,we don’t just change.tomorrow we’re gonna change our names to please who? titiwe on the other hand could be a suggestion since we are one of the only country that have it.but who decides anyway.

    Fig and codfish done rule out already because this is the national dish of St. Lucia.
    Callaloo is made in Trinidad, Jamaica and other islands but in a different way.
    Braff makes sense because the ingredients are local,it is cultural, healthy and easily prepared. Also it is versatile. Any meat can make a braff. but not ‘broth’ because it sounds so British. Therefore if braff is chosen I recommend that we spell it as BRAFF
    Sancoche is sensible because the ingredients are readily available and it has a rich cultural background. And Where else can you find sancoche anyway.
    Titiwee sounds good but it is seasonal and people are very skeptical bout it

    Roast breadfruit and saltfish no way!!! That was the meal of choice the slaves masters fed us on. Imagine on every plantation in D/ca there would have been at least 2 breadfruit trees. High productivity in terms of number of fruits per tree, low maintenance cost, and a good choice of carbs.. energy for hard working slaves (our forefathers) and then they topped it up with imported salt fish because of its long shelf life!!! Give me Titiwee

    Considering hypertension is so rampant in DA, I say ban the codfish – too much salt and low nutritional value. Long live callaloo – it is great for every diet and available all year round although some may choose to eat it mostly at Independence time. Callaloo gets my vote!

    Titiwee would be the best choice of the above. Cod fish is not native (Fig and Saltfish & Sancoche are ruled out).Callaloo is too common among the Caribbean islands. Broth is still an option but it can be confused with other “broth” dishes from numerous different countries.

    Mountain chicken (crapaud) was also seasonal as it could only be used during the ‘hunting’ season. My problem with callaloo is that several other countries use/make callaloo so that would not be unique to Dominica. Titiwee, like mountain chicken, would be seasonal but at least it is more in the traditional mode. Codfish is an imported item.

      I agree. But titiwee being seasonal should not be a problem – there’s no ‘hunting season’ like the crapaud or other wildlife. When it’s in season and there’s plenty, restaurants can freeze lots of it and we can enjoy titiwee all year round. I myself would freeze some in my little freezer. lol

      just the mention of a crapaud sounds awful a lot of people will not eat frogs either which way you want to call it we all know the mountain chicken is a type of frog and to most people its going to sound gross.so I go with callaloo without the crab it don’t matter if other islands have it Dominicans make their callaloo in a special way so I think vistors would enjoy it very much

    Fig and Salfish or Sancoche shouldn’t be strong contenders because Cod is not a local fish. Codfish is already so expensive, I’m not sure how often we eat it nowadays. Broth is a good one but the name broth will be easily confused by foreigners since it is common in other cultures but prepared in different ways. In that case a foreigner will not realise that our broth is unique and may not opt for a taste since they may think they know what it is.

    Callaloo in my opinion is the best. It is very popular like broth but the name is unique and it is mostly eaten at our independence time when the hunting season is open.

      Mountain chicken is found in Monserrat and a few other places around the world. It is not therefore as rare as titiwi. I would certainly choose titiwi over mountain chicken for that reason.
