Jemer Joseph, of Woodfordhill, has emerged the winner of Iron Chef Dominica 2013 Competition held at the Anchorage Hotel on Thursday evening.

Joseph is a chef at Secret Bay Resort near Portsmouth.

This is the second time the competition was held and it forms part of the 20th Anniversary celebration of DIVE FEST.

The judging criteria for the Iron Chef competition was as follows:

1. Presentation of Chef
2. Skill & Efficiency
3. Flare and Showmanship
4. Choice/diversity of dishes
5. Creativity, artistry and extent of use of the ingredients
6. Presentation of dishes
7. Taste of dishes

The Chefs had 30 minutes on Center-Stage to produce a starter and a main course.

Competitors were supplied with the following:

1. A 2 burner table top stove, set on a table with a basin
2. Branded ingredients from Astaphans and vegetables from the local market
3. Hot water in flasks, water for rinsing and cleaning, and plates/bowls for service,
4. Chefs were asked to come equipped with their tools including their favourite skillets, small saucepan(s), utensils and of-course knives and a good chopping board.

Last year Jessica Pinard-Byrne Yard, Food Enthusiast and Entrepreneur, won the title.

    Good morning my people. I want to congratulate Ms Joseph for winning the competition but she must realized that. If her winning dish is going to be photograph then its her ultimate responsibility to make sure its cleaned up before its photographed. Also if the dish was photographed by a photographer from DNO then that person should understand that they are presenting the dish to the world therefore they must be cognizant of how it will look on their Wedsite. I hope I will be able to sample her dishes when I visit in November . Again congrats to Ms Joseph.

    Why are Dominicans so afraid of truthful critique. The dish is sloppily presented. That is plain for all to see. It was a competition and therefore such comments are warranted and people are within their rights to comment on a story that was presented to them about a winner of a competition.

    If no comments were desired, the story should not have been posted.

    Dominicans, next time you walk into a restaurant in Roseau, carry out this experiment.
    Ask what for lunch?
    This is the response you would get.
    Fish, pork, chicken…. ( or what ever meats they have)
    The reason the dont tell you what else you will get with the meat is because they already expect you to know…
    Rice, peas, provisions… that is always the response.
    That tells me that my people are not creative with their meals, its like dog food, same thing everyday, why not be creative with the provisions, or be creative with the rice, or add other side dishes… its the same every, rice, peas, provisions. Its a pity.

      It looks like lion fish, cous cous and pumpkin with a generous amount of chives and a stale slice of lime. Auguste Escoffier must be turning in his grave at the sight of such a sloppy presentation. Then again, what can you cook in thirty minutes?

      It’s the famous Lion Fish with Cous Cous and Sauteed Pumpkins….. So delicious!…. Only a person who knows real food and have eaten at the best places would appreciate such a meal!…. Well done Jemer!… Secret Bay must be proud!

    We i don’t mean to put her down especially as she has my families name (no relation) but why has the journalist note advised us of what the dish is, is it because HE DON’T KNOW? It’s unrecognisable, i’m sure it must taste nice but i give her 1 for presentation…………..sorry :cry:

      I totally agree. If a plate was presented to me like that, I would have doubts. It may taste nice but sight goes a long way and this is not a matter of criticism. When I first saw the plate I was wondering what is that and where is the winning plate. Only to find out that when I continued to scroll down guess what? It said “The winning dish”

      Do not give her 1 for presentation. This has nothing to do with her. She came first therefore the overal presentation was excellent. The dish looks presentable and palatable. She deserves 10 to 100.
      The reason why the name of the dish may not have been posted is, so that the recipe is not stolen or it was oerlooked. Just my thought.
      What is important, she is the Iron Chef Dominica 2013. Congratulate her.

      Celia, You are a 100% correct, actually I would give it a 0 for presentation. I am also not surprised that you received so many negative thumbs down. When I eat at so many restaurants in Roseau the food looks no different from what I see there, it actually looks like left overs. I am sure it might taste nice, but it sure is not pleasant to the eyes, its very untidy.
      We in Dominica have become used to mediocrity, if this was presented to a customer in another country, he would have lost his job, with immediate effect.
      To prove my point, if he won with that presentation, you can imagine what the others looked like.

      The only thing I’s critique is, I didnt see a title of the dish.

      Also for the heavy critiques on here, bear in mind that the contestants were only given limited ingredients and had to produce a meal in 30 minutes.

      I do not know about you all, but it takes me that much time to try to figure out what I am cooking for dinner. (With a pantry full of ingredients)

      So she did well

    I agree with alot of other peoples views. Her presentation needs to be much better. You should atleast be able to tell what it is thats in the plate. but I guess it taste much better than it looks so congrats.

    If we are going to have copy cat shows like these, then let the participants brush up on their skills also.
    I need to know the name of the dish. I would like the name of the dish, main ingredients and that the dishes be placed on a neat table for presentation. If you are going to send these people’s pics all through cyberspace, then give them an opportunity to do a great job…not good, great!
    By the way-is the college ready to take on hospitality so that students can have avenues for this type of outlet? I’m just saying…hello Mr. Soft Subjects up there at DSC…

      Dishes that are thoroughly cooked do not photograph well because they look wilted and messy. The appetizing meals we see in photos are make up and Science.

      Apparently the picture was taken immediately after preparation. Given what was required the lady rushed to finish her dish in a timely manner. I think the photographer could not wait to take the picture. She WON regardless.

    As a culinary art teacher, I am very disappointed in seeing such a presentation. She needs to be given a scholarship to get some professional training.
    If that is the type of dish presented to guests at Secret Bay, I am no longer thrilled in staying there for my next vacation in Dominica.

      Are you willing to give classes/training to person such as the winner and others? Or just the usual critic!
      Why don’t you leave some contact info so interested persons can get to you and learn, but so doing the standards of presentation will increase and we will see less chefs being brought in from outside to get jobs in the local market. Just a thought!

      What difference it makes? Can you not see that she is wearing “her cooks cap?” Cooks who especially serve the public must cover their entire head so that stands of hair do not fall into the menu as they prepare it.

      I agree. When platting food, garnish must never make your dish look untidy but enjoyable. A little wiping of the would have help but of course I’m sure she knows all this, maybe time was against her.

        I think that the photographer rushed to take the picture, I believe the lady was running out of time, I am pretty sure this is NOT how she presents her meals at the Secret Bay Hotel. She would NOT be still employed. Give the lady a break. The photographer is at fault for this one.
