An initiative by the Emblems Committee in Dominica will soon give Dominica an official national dish.

Over the years, by general consensus, Mountain Chicken or Crapaud, has been recognized as Dominica’s national dish but this was never officially documented.

The Crapaud has been in rapid decline in recent years due to disease and has been protected by law since 2002.  Many see this as an opportune time to seek an officially documented national dish.

Chairperson of the Committee, Jacintha Bannis, told Dominica News Online that although the island has a variety of documented national emblems including a song, prayer, bird, tree and flag, the national dish is missing.

She said the committee has started a drive to get ideas for the dish. “We have started a drive to educate the public on the signs and symbols and solicit from them ideas for the national dish,” she stated.

Bannis pointed out that thus far, responses from the public have been forthcoming and Dominicans will soon be called upon to vote on what they would like to have as a national dish.

She explained that the voting process will be done via the radio and individuals will be allowed to call in and vote for one of the top three suggestions.

She indicated that the three most frequent suggestions thus far are callalou, sancoche and broth.

“We are looking for a dish that is popular, well-liked by all ages and is simple to cook. We want a dish that is unique to Dominica and is usually cooked in households, restaurants and hotels. It should be something that persons visiting Dominica want to come and taste,” Bannis explained.

According to her the dish has to be approved by Cabinet and she is looking forward to it being announced by Independence 2013.

    why must we promote the eating of exotic species as a national dish? we have so many vegetarian options that does not involve eating animals, we look like savages while we are promoting Dominica as a nature island, yet we take every opportunity to eat our nature, we have crab festivals, rabbit , goat, fish, beef, frog etc…. festivals!!!

    Why are the frogs diseased? There must be a reason for this. Dominica is a relatively healthy country with a lot of rain. They lack their food to keep them healthy. Years ago, prior to Dominica’s progress, they were healthy and edible. What were they eating then that they are not eating today to keep them healthy?
    I gave this a thought and concluded one of the reasons they are diseased could be that the entire country is being built up with bridges and factories. Trees are also cut down. This has been occurring for some years. This is the price for progress. Too much noise in the heads of the frogs which disturbed them and also from breeding that they have to find other habitats to thrive in. They are not fed by people. They are unhappy with this progress. If only they could talk. :lol: Did anyone ever give this a thought?
    Whatever the frogs were eating then to keep them healthy is non-existent today. If they continue to be diseased, it is only a matter of time that they will be fully extinct.
    The government should conduct a research as to the reason why they are diseased.
    I cannot see a bird being recognized as a national dish unless it is the Sisserou. I doubt this may be feasible. The national dish should be unique. It should not be similar to that of other islands. These are my views. I will keep thinking of one. :)

    I’ll tell you what. My trini friend has had two boyfriends and she called me in distress one time to ask me why Dominican men like fish broth so- all they want to do is play dominoes and eat broth. Broth could be a good seller.

    It needs to be sustainable; wildlife rarely is; as soon as it becomes popular it disappears.

    Dominica could have numerous traditional edibles – to promote culinary tourism and healthy living as these are foods the Centenarians ate.

    Sancoche is my vote for Dominica’s Traditional Dish: I prefer vegetarian filled with provisions and greens but each persons sancoche is different – each hotel and restaurant could create their own.

    Breadfruit or Mango is my vote for Dominica’s Traditional Food. Hopefully some Mango or Breadfruit fests evolve from this.

    Dukanoh is my vote for Dominica’s Traditional Creole Food. Sweet Cassava/Potatoes grated and mixed with spices; then wrapped in banana leaves and cooked in cane juice – yum!

    Pear with farine is my vote for Dominica’s Traditional Carib Food.

    Bhang Bhang or Cassava Bread is my vote for Dominica’s Traditional Bread.

    Mountain chicken “crapaud” is important to Dominica. It forms part of our culture and National Symbol.Our frogs has been affect by chytrid “a skin disease” since 2002. Government placed a total band on the eating/hunting becuase of the overhunting and the chytrid disease. The Mountain chicken is now an endangered frog species “meaning it’s on the verge of becoming extinct”..I support we change the dish but do not forget the important role this frog plays in our country..below is a link to an article to support that.     we should chose something that is pleasing to the eye as well as good stuff to the body. something with lots of food value. crab backs really sound good. the basic recipe with grated veg in there makes sense to me. or something else- not braff for sure.

    That is surprising to me. I grew up knowing that “Crapaud” is our national disk and I am now learning that is has never been documented. So if the “Crapaud” was not in extinction and protected by law, it would have never been documented. Well things happen for a good reason.

    On the other note, according to the chairperson of that committee and I quote, “The voting process will be done via the radio and individuals will be allowed to call in and vote for one of the top three suggestions.” I have a problem with this statement as I think all forms of media communications (text, BBm, email and online survey) just to mention a few, should be used.

    We should be making use of the technologies that are available to us and not limit ourselves to one form of media. There should be an opportunity for all Dominicans and non-Dominicans alike to participate and more so the young people who are savvy in these technologies and those living overseas to participate in this drive.

    May I give the Committee a suggestion, they can partner with the online news site like “www.dominicenewsonilne.com” or agencies such as Discover and Invest Dominica to design a survey and place it on their site. This takes less effort and you get you’re the result immediately.

    Well you know what? Not many dominicans especially the younger want to come back for broth or sancoche, muchless for tourist. Who see Tourist wanting to come to Dominica to sample big pieces of provision in an ugly grey water with fish with bones in it, like its camp food cannot be seeing right. Come on Dominica, get on par with the rest of the world. Think exotic. Crab back sounds good, maybe even the callaloo or bakes and titiwi accras, or so many things can be made out of yam, dasheen, tannia etc without looking like a brick on the plate. it can be pie, puffs, croquettes, scalloped with fish. Plantain pie in layers with salt fish is soooo delicious. but pls not that ugly grey water with bricks in it.

    Well, it appears that we have a lot of national dishes. :lol: I love all that were mentioned. All are delicious ones. I would vote for frog/ crapaud/mountain chicken or crab back.
    I have eaten crapaud. Never saw it killed. Only saw the body. When cooked, it is delicious. I am certain it has some nutritional value.
    I have also heard some people speak of cooking it as a soup and how delicious it is, that those who may not like the name (it), if given in that form would not know the difference, that it is ‘frog.’
    It is a delicacy. Of course, the sophisticated name for it is Mountain Chicken. This sounds better.
    Think of chicken and how many ways we could prepare chicken, legs, wings, breasts and thighs. Having stated that, Mountain Chicken could be prepared in the same manner.
    Have you forgotten Rabbit and how many ways as I saw on DNO during the Festival that it is prepared?
    Let us, hopefully, vouch for Mountain Chicken as the National Dish. It is unique. The second choice or if not the first choice is crab back.

    I think we need to rethink our national dish. I dont understand why our national dish is mountain chicken, when very seldom we eat or even see the damn amphibian. I am 33 yrs old and have neither tasted nor seen a mountain chicken furthermore for our young ppl. I think sanchoche or fig and codfish should be our national dish. there’s no way in hell imma eat a damn frog. Everything is this place is back to front.

      ‘sampling’ You used two vowels ‘e and i’. The vowels are a, e, i, o, u, although in this era some are used together which, in reality are incorrect. We, in Dominica had the British system and not the U.S. or even Canadian. The latter still being a sovereign country occasionally adopts the U.S. system.

    I think that Mountain Chicken/ Frog’s Legs should be designated the island’s national dish. I believe that efforts should be made to commercialize the growing of frogs just the same way conch harvesting in commercialized in the Bahamas. Most pbeople already believe that mountain chicken was the country’s national dish, at least i thought so.

    well it seems to me that it already has the status of unofficial national dish… just remove un and make it official…

    Additionally wildlife like the land crabs, manicou and agouti could also be raised commercially so we could have these exotic meats year round at least for the tourist market. WILD MEAT is big business in some countries… this is one way to take our natural resources and use it for economic purposes. These initiatives will create foreign exchange earnings in the sale of wild meat reared in live stock farms, create jobs and help with food security…

    Revenues raised from sale of wild meat could be used towards research and development of the new Wild Meat industry, that will also include research into the demise of our unofficial national meat/dish the CRAPAUD… affectionately known as Mountain Chicken. Finally there is frog legs on sale in supermarkets in the USA and other metropolitan countries why cant we have the same here…

    If the majority of Dominicans do not want frog legs then let’s consider a authentic Kalinago dish as aour national dish… they have quite a few recipes we can consider… :wink:

      A lot of thought has been put into McLawrence’s submission. Real food for thought. However, I puke at the thought of eating mountain chicken and run away when the legs start jumping out of the pot. And, there are lots of Dominicans like me.

      So although I believe these wildlife should be researched, farmed and marketed the way William is suggesting, I would vote for Roasted or baked Yampeh Jhon and smoked fish. Totally local from both land and sea.

      Now that is delicious, and available almost year round. And you dont have to worry about disease. Most rural Dominicans do up a wicked smoke fish. Yum! Yum! Yummy!

      No frogs legs jumping out of the pot.

      I have studied mountain chicken frogs for many years and have to say that breeding these animals on a commercial scale would be a very difficult task. They have a complex reproductive strategy that involves parental care and feeding of the young with infertile eggs. Females can only produce one nest of young per year and require huge quantities of insects to eat that have to be either caught or bred in captivity.

      More importantly, mountain chickens are now Critically Endangered – this is one step away from becoming extinct! They have been virtually wiped out by a fungal disease called Chytridiomycosis which is affecting amphibians all over the world. As this is a relatively new pathogen, scientists are still trying to find a solution to this serious problem.

      The Dominican government has made it illegal to hunt or eat the crapaud or to possess these frogs or parts of these frogs. It is also illegal to import frogs or frog products to Dominica.

      Many Dominican and international biologists are working very hard to save this unique species. Please support their efforts and find out more about how you can help at the Forestry and Wildlife Division office.

      Dominica is the Nature Island of the Caribbean and you have plenty of other fabulous food choices to select as your National Dish! :-D

        The request is for suggestions for a National Dish. Mr. McLawrence’s choice is Frog’s Legs. There are hundreds of other choices but that is his choice. Other choices include breadfruit and smoked fish, crab and calalloo. People’s choice of a National Dish has to be respected. If the writer read the submission carefully she would have seen where the guy talked about research and development int the disease affecting the crapaud, and, how commercializing other wildlife could create economic opportunities for the country … Go tell the USA and other developed countries to pull frog legs and other wild meats that are not endangered due to over hunting off their supermarket shelves… What you want the national dish to be the nasty frozen chicken from america or the madcow meat from europe? lmao… :lol: :lol: :lol: any way is there really a need for such an exercise since all the foods men mentioned are used elsewhere anyway…

    i no longer live in Dominica, and when my friends ask me what is one thing i’ve ate in Dominica and not where i live now and i said crab callalou or sancoche. Thing is i’ve never had frogs legs and i’m sure alot of people havent either. although during our independence celebrations saltfish is widely served, i do think callalou would be a better idea. I see some people make mention of titiri which i also love and also had to explain it to my friends as they had no knowledge of it. this is a very good search, and it’s good to know that we can come together and make positive suggestions for a new national dish

    This is a great move. Not only should such a dish be readily and easily cooked by all Dominicans it should also be prestigious enough to form part of the menu at state dinners and so forth. Additionally, that dish should form part of the menu of our national teams particularly on tour. I remembered the Antiguan national teams eating their Fungee and Saltfish before games. This is a great move indeed.

    If we are trying to protect them from decline, how is it that they are the first suggestion for the official “National Dish”?

    Does National Dish not mean we will be serving it more frequently than other dishes–especially to those who visit Dominica from other countries?

    Sancoche it is for me. I have travelled quite a bit and no one else does it like we do in DA. I think it would be very appropriate for us. Not everyone eats crab for various reasons and saltfish is imported. My suggestion is Sancoche.

      totally agree. one of my suggestions also. there is now where I have been and they do this. Dominica is the only place where I know this is prepared….or slatfish is prepared in that way and we do it during independence time a lot also. I think this is great

    Are you people really having a laugh? Or are you all seriously contemplating naming a bloody frog as your national dish?
    Dominicans in the wider diaspora is already a laughing stock for being known as frog eaters, now you people are thinking of making this your national dish???????
    This ridiculous idea can only come from Dominica. There are more important issues that should be tackled and given urgent priority; i.e. Improving the general infrastructure of the island, initiatives to create jobs, initiatives to attract foreign investors, improvement on the country’s healthcare service, etc, etc. Not a ridiculous and laughable idea which isn’t going to generate any meaningful revenue for the island.

      Frog’s legs is delicacy in many parts of the world from Thailand, Vietnam, Indonesia, the region of Alentejo in Portugal, Spain, Slovenia, northwest Greece, and Northern Italy, as well as the Southern regions of the United States.

      So eating that stuff is not only in Dominica.

      Go read a book.

        I don’t need to read a book because I am already fully aware of the aforementioned countries you have listed where frog is very much part of their cultural delicacy. However it is not the national dish of these countries is it?

        I am a proud Dominican; and I want to see Dominica making big improvement strides for it’s citizens.

      Shut up and leave s n our frogs the hell alone. People eat slugs, roaches termites all sorts of things so what. I love frog. They are yummy. If ever was something look and taste like chicken is frog. I am just sorry I cannot eat it anymore.

    A dish that is unique to Dominica? Hmm that may be hard since the Caribbean islands usually have the same things …only Ackee and Saltfish and flying Fish and coo are the uniue ones that I can remember off my head.

    but anyways… in attempt to be unique – i’ll say Titiri … not many other islands know about the titri …i always find that i’m having to explain it ..so that in itself tells me that it’s a bit unique to us. Most other island foods, though called differently.. usually end up being the same things once described…however, i havent had that with titiwi…

      Same here and I am in Jamaica now and when they ask me about our national dish I always say mountain chicken because that is what I grow knowing as our national dish even though I never ate it. I am glad we are finally looking into it.

    EVerywhere in the cariibean they have sancoche and salt fish.How about the zie crapuad? its made from touloman. Or how about Casava and dowade(dolphin)decorated with che dasshen (young dasheen leave use for the callaloo? This is a kalinago dish that has been disappearing from our table. Importing saltfinsh would add to our importation bill. dowade(dolphin) would give our fisher folk more incentive to take up fishing as a business and pastime . it will create job and increase the demand for the fish.the casava would encourage the growing of a traditional food crop thus leading some people to gro an econimical crop since it requires little attention.

    The Carib name that we still use today for one type of Goby fish (Sicydium punctatum)is Titiri. I think Dominica should claim the Titiri in all its forms – accra, sancoche, fresh fish gravy, curry – just as we had the Crapaud, I believe the Titiri could replace the Crapaud as our national dish – and it has my vote all the way from the UK. (LOL)

    I might sound stupid buit we have the nastiest lookin national dish.. It may look unique but a lot of people won’t eat it especially the younger ones. Y they didn’t suggest cum stew baq nd neck with provision nd sum duplin. In a brown source… This is CRAZY nd rare to ind.. I have never eaten it nd I don’t want to.. A frog man?? Awa awa..     You mean all that time I was in school learning Crapaud was the official dish, it actually was not official. Wow!

    Anywho, voting should also be done online. Get with the times people. I think the committee also needs to look at the origins of the meals as the Caribbean and Latin America share many of the same dishes and although we may prepare a Dominican version, it may actually originate somewhere else and taste better when made in another island or country. Just my two cents.
